Start with a fixed recipe
Lock dose and yield first. Change one variable at a time: grind, then time, then taste. We use a 1:2 ratio as the baseline for light-medium roasts.
Taste before you chase the clock
Sour usually means under-extracted (finer / hotter / longer). Bitter usually means over. Tabular timing helps, but your palate is the scoreboard.
Steam without wrecking the shot
If you are on a single boiler, purge and sequence carefully. Dual boilers remove the wait—use that time to texture milk properly.
Log what worked
Write dose, yield, time, and grind notes. Next bag of coffee will thank you.
